Gooey Marshmallow Sweet Potatoes

(Serves 4 – 5)
Ingredients:
3 large sweet potatoes, peeled, diced and cooked
1 egg
1/3 cup sugar
2 cups mini marshmallows
1 tsp vanilla extract
½ tsp cinnamon
Instructions:
Preheat the oven to 350°F.
In a large bowl, combine the cooked sweet potatoes, egg, cinnamon, vanilla extract and sugar and mix with an electric mixer for a few minutes. Place the potato mixture in a 2-quart ungreased baking dish and bake uncovered for about 25 minutes. Place the mini marshmallows on top and bake for another 5 minutes or until the marshmallows have melted.
